The Garlic
The bulbs of the garlic plant are the main ingredient for the basic spices in Indonesian cooking. Raw garlic is full of sulfur compounds, including a chemical called alliin. (Alliin or alin is a sulfoxide compound which is found in nature in garlic. Alliin is a derivative of the amino acid cysteine). When raw garlic is chopped or cut into small pieces, the alinase enzyme will convert aline into allicin which causes the garlic to have a specific aroma and taste.
Garlic is known to cause bad breath (halitosis) and body odor, which is described as a strong "onion smell." This is caused by allyl methyl sulfide (AMS). AMS is a volatile fluid that is absorbed into the blood during the metabolism of garlic-derived sulfur compounds; from the blood, the substance then flows to the lungs.[2] This substance also accumulates in the skin, where it is emitted through the skin pores
